This morning I was laying in bed scrolling through all my social media, updating myself on the things that had happened the while I was asleep. I noticed one of those food videos, you know, we have all seen them; they usually show us how to make this quick delicious food while also making our stomach growl. Also am I the only one who wonders if any one really replicates these recipes? Anyhow, this one was different and stood out from the rest. While most of the food related videos seem to be over indulgent foods that are high in fat and calories, this one was actually quite healthy! Recently Zak and I decided we needed to start eating more fresh, clean, and simple; so this recipe was perfect! I gathered all the ingredients and was excited to make it for dinner! It was so easy, delicious, and filling and left us feeling great and not bloated! So without further aeidu here it is!
Alright this is what you will need for the marinate and reserve salad dressing:
1/2 tbsp Garlic Powder,1/2 tbsp minced garlic, 1/2 tbsp salt and pepper, 1/2 cup olive oil, 1/2 water, juice from a whole lemon, 1/3 cuo apple cider vinegar, 1/3 cup chopped parsley, 1/3 cup chopped basil
One you set aside your reserve dressing you can add your chicken thighs or breast into the bowl to marinate. At this point I heated up a cast iron skillet. Once the skillet was heated up I placed the chicken in and let them cook till they were golden brown.
To this salad I added chopped tomatoes, cucumber slices, sliced black olives, avocado, goat cheese, chicken, and another squeeze of half of a lemon!
