My Favorite Tortilla Soup!

I love love love tortilla soup! With this past weekend being nothing but cold rain and wind, it felt necessary to make it! This soup is quick, easy, and full of veggies!
Let’s jump right in!
First, heat up some olive oil in a large pot. To the olive oil add a diced red onion and a tbsp on miniced garlic. Sauté onions till slightly translucent.


Then it’s really quick from here!  You simply add two cans of fire roasted tomatoes and two cans of green chilis to the pot.  Then a bag of frozen corn and one to two cups of frozen or fresh carrots depending on your preference!

I love this Roasted Corn from Trader Joe’s! Yum!


At this point when you look down into the pot you’re probably questioning why did I ever try this, because yes, it will look not look appetizing. But trust me folks it gets better!

To your mixture add the juice of one lime and 1 1/2 cartons of low sodium chicken broth! Make sure to season well with pepper and salt!  Keep in mind I use low sodium chicken broth, if you would like to skip adding salt I would suggest getting regualr chicken broth or even one of both!   Also, If you like heat slice up a jalapeño and put that it there as well!

Next bring this to a simmer.  While waiting take a rotisserie chicken and shred the meat for the soup.  Let the soup simmer for about 20 minutes and then lastly add the chicken!

Gunner LOVES chicken, so this begger eventually got a small piece!

Stir in your chicken and let it heat through and you are good to go! Put some of your favorite toppings out and holler at your family or friends and get ready to enjoy!

A Beginner Gym Routine Workout

Ladies, often times when we walk into the gym we feel so overwhelmed by all the things that it has to offer. We have no idea where to start.  Do we go over to the machines? Do we walk on the treadmill? Do we try to do something with those weights that are on the wall?  I’ve been going to Golds Gym off and on for two years, and when I say off and on I really mean more off then on!  It’s really starting to show, my clothes are tighter and I just don’t feel great about how I look!  It’s so hard to get motivated to get up and go to the gym when you have no idea how to accomplish your goals.  I just wanted to work mainly on tightening my backside aka my Glutes and hamstrings, tightening my core, and work on toning up my arms!  Now bare with me as I try to take you through what a begginers workout can look like!  I may not get all the words right but hey we are learning together right?

Thank you to my dear friend Elijah Bailey who holds a kinesiology degree from UCO and is a personal trainer at Golds Gym! Elijah not only made it fun but he made it very educational and explained why we do each workout!


So Elijah stated that he believes military workout are the best for warming up because it promotes functional fitness that you can use in your everyday life with components of mobility, flexibility, endurance, strength, and they are easy efficient workouts you can do with your friends and no matter the age!  So let’s jump in!

Warm Up!

Wall squats 3X5

For beginners legs shoulder width apart, and squat toward the wall as far down as you can go.  Keep your toes and knees touching the wall.  Elijah suggest trying to keeping your chest and or nose againist the wall as well.

Air Squats 3X15

These are the squats we are all familiar with.  Squat down as far as you can go and use your legs and lift back up.

Goblet Squats 3X10

If you have a bad shoulder modify this exercise by letting the weight hang down and letting it rest on the ground when fully squatted.


Or If you have a normal shoulders squat with the weight held up like a goblet!

Push ups

I am the worlds worst at push ups.  Elijah suggested trying to do 2 every day 1 in the morning and 1 at night, and then 4 ,then 6, then 8, and so on.  Also you should try to bring your body down until you are a fist away from the ground and then raise back up.

Into the workout!

Hip Abductions
You can often finds these machines at your local gym.  Elijah said “I suggested 3X10 because it may only help you get acclimated to the workout with consistent sets and reps, it’s an easier recommendation for reps to focus on breathing but it also is the average set and Rep goal of the ACSM (American Sports College of Medicine) which even at this level offer great benefits of strength, endurance, flexibility, mobility and increased respiratory function.”

I loved working on the machines!  There are instructions right in front of you, and also it shows what muscle groups you are using.  When using the machines make sure to go slow and feel your muscles tightening and contracting!

Arms

Bicep curls 3X10

Start with arms straight down palms touching outside of legs than as you curl up keep elbows in tight and rotate arm up so knuckles are facing away from you .

Or Modified bicep curl consist of sitting down and doing the same type of curl.

Tricep kicbacks 3X10

Standing bend knees and take dumbbell and have are at 90 degrees with fist pointing down move dumbbell straight back while keeping arms in close to body.


Or Modified Tricep Kickbacks

Lean one knee on bench and move one arm at a time back and then back forward to resting position.  Remember do opposites arm to knee that is resting on the bench.


Chest press 3X10

Bring arms up but keep slightly bent and then down to 90 degrees.

Chest flyers 3X10

Again bring arms up and then bring arms all the way extended to about level of your ears then back up!

Leg Extensions 3X10

Find the weight that is right for you and make sure that bar over your shin is adjusted to fit your needs then raise and slowly lower.  This works the top of your thigh!


Prone Leg Curl 3X10

Right I already know what your thinking, there is no way you are about to get on a machine like this at the gym.  Let me just say I understand but believe me it will be worth it if you do!  This machine works those pesky little dimples on the back of your legs!

Glute 3X10

Meet my new best friend!  This machine is pure gold!  Not only does it  up your butt but works the front and back of your thighs!  Just rest your elbows and stomach on the pad and kick the bar back and up with each leg one at a time!

We finished up with some crunches and a lower back exercise!

I can’t wait to do this work out again!  Elijah said to make sure to change your workout every 3-4 weeks so if y’all enjoy this post I will make sure to post a follow up workout!

Movie Night Treats! 

I am a snacker.  I absolutely love to snack.  It’s a serious problem.  I want something savory and then I want something sweet and then I want something savory.  It’s a vicious cycle!  If you suffer from something similar to me, I am here to help.  I have come up with four yummy treats to snack on while watching a movie or doing homework!  I have two sweet and two savory options!  Or you can create all four like I did!  They are a great mix and I love all four!

Something Savory: Cajun Pretzels!

These are sooooo delicious and if you love a little spice you are going to love these!  They make a ton so you can save these for snacks through out the week or give them out to friends!

What you’ll need!

1/2 cup canola oil

1/2 tsp of cayenne pepper

2 tbsp Old Bay Seasoning

1 packet of hidden valley ranch packet

1 16oz bag of small pretzel twist


First heat oven to 250 degrees!

Mix the oil and the dry ingredients into a small bowl.  Then in a separate big bowl pour in your bag of pretzels.  After the oil mixture is mixed together pour it over the pretzels and toss until all are coated evenly!  

Once they are coated line a baking sheet with parchment paper and spread the seasoned pretzels out and place in the oven for 30 minutes!  

(Currently listening to Justin Timberlake station on pandora) Make sure to have a little dance party as you take your pretzels to the oven!


Make sure to shake them around a bit about every 10 minutes!


Sometimes the cute little begger at your feet deserves a taste as well!  These pretzels were quick, easy, and so savory!
Something Sweet: Frozen Grapes!

I love washing some grapes picking them off the vine and popping them into the freezer for few hours!  They are a great frozen treat on a summer night and not to mention super simple and healthy!

Something Savory: Chili Lime Popcorn!

This popcorn is super scrumptious!  Here is what you will need!

1/4 cup kernels

4 tbsp of canola oil

1/2 tsp of chili powder

Juice and zest of one lime

And salt as needed


Pop your popcorn!  Then is a separate small sauce pan mix 2 tbsp of canola oil, the chili powder, and the lime juice!  Once simmering mix and turn off!  Place your popcorn in a bowl and pour mixture on top and mix or shake!


Add a bit of salt and lime zest and you are all set!


This stuff is dangerously addictive!  You’ve been warned!
Something Sweet: Chocolate Peanut butter Banana Bites!

Okay y’all, this one was a bit messy but pretty good!  This is a great alternative to a candy bar if peanut butter and chocolate is your thing!

What you’ll need!

2 bananas sliced

Peanut butter

Dipping chocolate


Slice your bananas to desired thickeness and spread peanut butter on one side.  Stack like a sandwich.


Learn from my mistakes and either use a fork or a toothpick and dunk half of your banana sandwich into the chocolate and place on a baking sheet lined with parchment paper!


Freeze for around 2 hours and enjoy!

Spring Time Smoothies 

 Preface: A special thanks to my friend Serena who gave me this creative idea for Spring time smoothies!

I love spring, warmer weather, flowers, Easter, and so on! With warmer weather comes less and less clothing!  Let’s be real as much as we’d all like legging season to be year round, it’s not.  So why not start your morning off right with something cool, refreshing, and healthy for your body!  I came up with 4 different Spring time smoothies, so give them a try if they sound good and let me know what ya think! 

Smoothie 1

Purple Smoothie! 

This smoothie consisted of one banana, one cup blueberries, one cup vanilla coconut milk, and is topped with a tablespoon of chia seeds! 


So I just threw everything into the bullet and blended until smooth and then poured the chia seeds on top!  Side note: frozen banana would have made this smoothie have a better consistency!  Also after you get done taking your picture make sure to stir in your chia seeds which are a great source of protein!  I love this purple color! 


Smoothie #2 

Pink Smoothie 


This Smoothie gave me real spring time vibes!  It was so so tasty!  It consisted of one cup raspberries, 1/2 cup peaches, 1/2 cup mangos, two tbsp ground flax seed, 1/4 cup water,and one cup vanilla coconut milk! Once you blend it you get this beautiful pink color! 


It Reminded me of sorbet!  I dished it up into a glass and topped with a scoop of whip cream (totally optional), it was seriously so delicious!

Greenish smoothie?

Dairy Free!

Okay y’all, this one was a bit rough.  I’m not going to lie I had to sweeten it up with some honey!  This smoothie contains no dairy products.  It is simply one cup frozen cut leaf spinach, one cup frozen strawberries, one banana, and 1/2 water! Blend, Blend, and blend till it looks unappetizing and that’s when it’s finished! 


No im kidding, I topped this with about a tablespoon of honey and some shredded coconut and it tasted alright! 


Smoothie 4

Yellow Sunshine Smoothie! 

Dairy Free! 

This smoothie is so tropical and yummy!  It consists of the one banana, one cup mangos, one cup peaches, 3/4 cup water, and is topped with some frozen blueberries!  


You know the drill! Blend, blend, and blend! 


This smoothie is a keeper for sure!  Taste like I should be on a beach some where!

One Pot Wonder! 

Okay I was so super skeptical about this meal.  I kept thinking there is no way it is going to be this easy and actually taste decent!  Oh my word y’all, I am so super impressed!  This meal was not only easy and required little to no dishes but was delicious!  I was able to get my groceries in between class and also get the chicken in the marinate!  When I got home this meal became a breeze!

What you will need!

Olive oil

Red wine vinegar

Salt and Pepper

Ground Basil

Rosemary

Parsley flakes

2 Lemons

1 Zucchini

1 Red Bell Pepper

Small bag of Yellow potatoes

Kalamala Olives

Garlic fresh or minced

Red onion

4 Skin on bone in chicken thighs

*not pictured olive oil & ground basil

Okay the ingredients for the marinate are pretty simple:

2 tsp ground basil

1 tsp rosemary

2 tsp parsley

1 1/2 tbsp of red wine vinegar

2 1/2 tbsp of olive oil

1/4 lemon juice

5 cloves of garlic

Salt & Pepper to taste


You will mix this together and pour half to reserve for later.  Meanwhile you will put your skin on bone in chicken thighs in the marinate for an one hour or overnight.

After you watch a little T.V., workout, do some homework, chase your kids around, shower, or whatever you need to do, you come back to a quick and easy finish.


You start with your Ceramic pot like picture above.  I bought this one at TJ Max for around $40 and I am in love!  You turn your oven on to 430 degrees. Then pour some olive oil into your pot and turn up the heat on the stove!  Once your olive oil has heated up you can start browning your chicken.  I let them brown for about 4-5 minutes and then flipped them and continued to cook them for another 4-5 minutes. 

While the chicken is browning, I went ahead and cut up the red onion, zucchini, lemon, red bell pepper, and small yellow potatoes.  

Once he chicken was done I poured out some of the grease and went ahead and put the veggies and olives on top! 

After you pile them all on top of the chicken you then pour your reserve marinade over the top and then toss the veggies making sure to get them evenly coated!


Once you are finished throw the top on and stick that bad boy in the oven at 430 degrees for 35 minutes!  When the timer goes off pull out your masterpiece and VOLIÁ dinner is ready!


We served ours up in a dish and took it outside to enjoy the lovely spring weather!  We really enjoyed how quick and tasty this meal was.  The only thing I would change are the olives.  They seemed too salty and neither of us ate them!  If you love a kick of salt keep them in!  Either way if you have a busy schedule, you have to try this!  I was super impressed and can not wait to try another one pot meal!  Let me know what y’all think!  Thanks for stopping by! My Top 7 Drugstore Makeup Items!

Let’s be honest, makeup can get expensive really quick when you are in Sephora or Ulta.  How do you get the look of high end make up on an affordable realistic budget?  You head on down to Target.  I have acquired slowly a bit of high end make up over the years and I am always surprised when I find my self using my drug store favs.  I have to be honest I am usually reaching for these more often than not.  Just so you know my skin type is dry and sensitive so some of these things might react differently your skin type.  Okay let’s get to it!

#1. L’ORÉAL INFALLIBLE PRO-GLOW

This foundation is my FAVORITE.  I have tried highend foundations and nothing compares.  It is a medium coverage and feels so light on the skin!  This also doesn’t break out my sensitive skin; I love it!

#2. MAYBELLINE INSTANT AGE REWIND

This concealer has been on the market for awhile now and hasn’t lost any popularity at the drug store and its easy to see why.  It covers dark under eyes and quickly conceals blemishes.  This concealer offers pretty decent coverage and seems to last for about 6-8 hours.

#3. ESSENCE SILKY TOUCH BLUSH

I don’t hear many people talk about this blush and maybe because it is difficult to find, I have only found it at Ulta.  Let me just say though that this blush is EXTREMELY pigmented and last all day long!  Essence offers a small range of colors but they are powerful and worth it especially if you are on a budget!  These bad boys ring up at less than $5 a piece!

#4. RIMMEL LONDON STAY MATTE

LOVE this powder!  I use it in the shade transparent.  It does have quite a bit of all out so careful if you are wearing black when applying this but other than that this powder has zero down falls!  It keeps me matte all day and keeps my make up in place perfectly!

#5 MAYBELLINE GREAT LASH “LOTS OF LASHES”

This mascara is my ride or die, I cannot live without this in my bag!  It is inexpensive and performs like a high end mascara!  I absolutely love the formula and like that I can build up my lashes to my preferred thickness.  It is important that you understand there is a difference between “Great Lash” and “Great Lash Lots Of Lashes”, don’t ever say I didn’t warn you!

 

#6 MAYBELLINE EXPERT WEAR (BROW PENCIL)

I have been using this brow pencil for a few years now.  It is my favorite drug store brow product but I must say this product can feel waxy and tug at your brow when applying sometimes.  This product offers great pigment and really last all day long.  This pencil last me a couple months and comes in a pack of two for under $5!  It is a great buy!

#7 WET N WILD H2O PROOF EYE LINER

This liner has its ups and downs.  This liner in not consistent in its formula.  So you are probably wondering why did I choose to put this on my list.  It’s simply because when this liner is a great formula it performs as well as a high end liner if not better.  It stays on all day, and is extremely opaque.  I have bought a couple of duds over the past few years but this liner is very inexpensive and you can always return it for a new one.

Green Go Go Juice! 

The other day I was in a rush to get out the door and wasn’t very hungry but knew I needed to have something on my stomach.  I also happened to have quite a bit of produce in my fridge.  I am the worst about buying a ton of fruits, veggies, and salads with intentions of eating them but most of them tend to go bad and are tossed out.  So I grabbed my selection of unused fruits and veggies out of the fridge and pulled out my juicer and started juicing.

I had a green apple, a pear, a cucumber, and a bowl of spinach!

Now while I like juicing I don’t find that it sticks with me for long, I’m usually hungry by the next hour.  Some people do just have this as a meal.  Let me tell you right now.  There ain’t no way.  But hey, if you can more power to you!


I can’t get over how green this juice is though!  I love the color and I loved knowing that I was giving my body something that was extremely raw and healthy!  So often the drinks you pick up at the store claiming to be healthy are loaded with sugars.  This was naturally sweet and made me feel great!
