Quick and Easy Spaghetti Squash

Last week I tried something new in my dinner routine.  I tried making spaghetti squash!  It was extremely quick, easy, and delicious!  It was so good that I decided to go ahead and make it again this week!  I absolutely loved it and it is a great way to get your veggies in!

Start by preheating your oven to 375!  Then cut your spaghetti squash in half.  Season your squash with a bit of olive oil, salt, and pepper.  Lay your spaghetti squash face down and bake in the oven for 45-50 minutes.

While that squash is cooking away start on your sauce.  Now listen, we are all different, right?  So with that being said if you don’t like this sauce switch it up and try something you like.  Either way all you need is a little tomato sauce for your squash and BAM, dinner is served!

   First cut up a half of a red onion and add a bit of garlic and cook until soft. At the same time I start cooking my Italian sausage.  I just picked this one up from sprouts. I love this one because it is a little spicy and taste delicious! Cook the meat and drain off the extra fat. Then put two cans of Italian chunky tomato’s into a sauce pan.   Add some Italian seasoning and salt and pepper to taste.  Once cooked add the sausage in and stir it to combine all the ingredients. 


Once the squash is done I take it out of the oven and let it cool for about 5 minutes.  I then flip over the squash and start pulling it the flesh with a fork until it becomes stringy. (Also be smart and lay down parchment paper before cookingūüôĄ…)  Then I add the sauce on top of the squash and sprinkle a bit of cheese on top and there you go dinner is served!  This also goes great with a small side salad and or some fresh fruit!  Enjoy!  If you try this let me know!  Thanks for stopping by!

Spicing Up Your Taste Buds! 

Have you ever needed to impress someone with a meal and with little to no time to prepare?  Well fear no more!  I have the most perfect meal that is quick and sure to impress!  Drum roll please!

Cajun fettuccine and apple pie!

I know these two may not sound like a match made in heaven but believe me both are delicious!

Cajun fettuccine

1 lbs shrimp

Andouille sausage

Fettuccine noodles

Heavy cream 1 pint


“Slap ya mama” seasoning or other Cajun seasoning

Parmesan cheese

Bring a small pot of water to a rolling boil and cook your andouille sausage for 20 minutes if needed.  I am only telling you this because I thought mine was precooked and come to find out nope, so it kind of threw my timing off.

Next, boil a large pot of water and follow the directions on the package to cook your fettuccine. 

During this time that the fettuccine is cooking, take out a large skillet that is deep and start cooking your shrimp with a small amount of oil.  Season shrimp with garlic and pepper.  You will not need to season with salt because the Cajun seasoning has salt in it.  Once shrimp is pink add cut up andouille sausage.

Next, cover the sausage and shrimp with the heavy cream and bring to a simmer. Be careful not to add to much cream just cover the top of the Sausage and shrimp add Cajun seasoning.  Then add noodles, mix, add parsley and cheese on top, and serve!

Yum yum yum!  Absolutely fell in love with this dish!  So quick and so flavorful and delicious!

Quick and easy apple pie!

Nothing says summer like a slice of apple pie with a scoop of ice cream! This apple pie was surprisingly easy, minus the part when I ripped my pilsbury pie crust not once, but twice and literally had a melt down like a small child. < sorry for the run on sentence. ¬†Just thought I’d share that just so you know things do not always go as planned.

What you’ll need:

6 peeled apples preferably green

2 tbsp of flour

1 cup sugar

A pinch of salt

1 tbsp cinnamon

1/4 tsp nutmeg

1 tbsp lemon juice

Pilsbury pie crust

First start by preheating oven to 425.  Peel apples, which is a pain in the rear, and then cut into thin slices.  Place apple slices into a bowl with sugar, flour, cinnamon, nutmeg, and lemon juice.  Mix all together.

Once mixed together, place pie crust in ungreased pie dish and press firmly.  Add Apple fillings to the pie crust and then lay second pie crust over the top.

You can seal the edge with your fingers or a fork.

Make sure to cut slits in your pie so the steam can be released.

Put foil around the edges so the outter crust does not burn while cooking.  Remove during last 15 minutes.

Bake for 45 minutes at 425 degrees!  This pie made my house smell amazing!  It was the first pie I have ever made and I was so happy with the final proudut!

We let the apple pie sit for about 2 hours somehow and then completely indulged!

My Favorite Tortilla Soup!

I love love love tortilla soup! With this past weekend being nothing but cold rain and wind, it felt necessary to make it! This soup is quick, easy, and full of veggies!
Let’s jump right in!
First, heat up some olive oil in a large pot. To the olive oil add a diced red onion and a tbsp on miniced garlic. Sauté onions till slightly translucent.

Then it’s really quick from here! ¬†You simply add two cans of fire roasted tomatoes and two cans of green chilis to the pot. ¬†Then a bag of frozen corn and one to two cups of frozen or fresh carrots depending on your preference!

I love this Roasted Corn from Trader Joe’s! Yum!

At this point when you look down into the pot you’re probably questioning why did I ever try this, because yes, it will look not look appetizing. But trust me folks it gets better!

To your mixture add the juice of one lime and 1 1/2 cartons of low sodium chicken broth! Make sure to season well with pepper and salt! ¬†Keep in mind I use low sodium chicken broth, if you would like to skip adding salt I would suggest getting regualr chicken broth or even one of both! ¬† Also, If you like heat slice up a jalape√Īo and put that it there as well!

Next bring this to a simmer.  While waiting take a rotisserie chicken and shred the meat for the soup.  Let the soup simmer for about 20 minutes and then lastly add the chicken!

Gunner LOVES chicken, so this begger eventually got a small piece!

Stir in your chicken and let it heat through and you are good to go! Put some of your favorite toppings out and holler at your family or friends and get ready to enjoy!
