Last week I tried something new in my dinner routine. I tried making spaghetti squash! It was extremely quick, easy, and delicious! It was so good that I decided to go ahead and make it again this week! I absolutely loved it and it is a great way to get your veggies in!
Start by preheating your oven to 375! Then cut your spaghetti squash in half. Season your squash with a bit of olive oil, salt, and pepper. Lay your spaghetti squash face down and bake in the oven for 45-50 minutes.
While that squash is cooking away start on your sauce. Now listen, we are all different, right? So with that being said if you don’t like this sauce switch it up and try something you like. Either way all you need is a little tomato sauce for your squash and BAM, dinner is served!
First cut up a half of a red onion and add a bit of garlic and cook until soft. At the same time I start cooking my Italian sausage. I just picked this one up from sprouts. I love this one because it is a little spicy and taste delicious! Cook the meat and drain off the extra fat. Then put two cans of Italian chunky tomato’s into a sauce pan. Add some Italian seasoning and salt and pepper to taste. Once cooked add the sausage in and stir it to combine all the ingredients.
Once the squash is done I take it out of the oven and let it cool for about 5 minutes. I then flip over the squash and start pulling it the flesh with a fork until it becomes stringy. (Also be smart and lay down parchment paper before cooking🙄…) Then I add the sauce on top of the squash and sprinkle a bit of cheese on top and there you go dinner is served!
